Fried eggs in tomato sauce




Break....fast

Easy and quick to cook, tasty and everyone’s favourite (almost everyone) while dietary the are a proper meal. The only thing you absolutely need is appetite...


Ingredients

- 2 eggs
- Some leftover tomato sauce
- Grated feta cheese


- Sliced chives
- Salt
- Freshly grated pepper
- Bread ψωμί >
- and some tsipouro (traditional Greek alcoholic beverage)!!


Method

Pour some oil in a saucepan and the tomato sauce. When you bring it to boil add carefully the eggs and place over a cover in order for them to cook. After a while, checking to see if they are cooked to our taste, take them off the fire and serve on a plate where you have already placed the grated feta cheese.

Tip: A lighter version would include baking in the oven. Instead of the saucepan use a stoneware pan pouring in the ingredients in this order: oil, tomato sauce, eggs, salt and pepper, the feta cheese cut in small cubes, placed around the eggs...et voila! Ready to bake! Preheated oven in 2000C and baking for about 7 minutes. Anyway you choose to cook them, the result is amazing!
