Sole fish fried with green aromatic salad




Batter
Ingredients (serves 4 people) Method
  • 250 g flour
  • 200 g lukewarm water
  • ½ sachet dry yeast
  • A pinch of sugar
  • Zest of 1 lemon
  • 1 grated zucchini
  • Salt
  • Vegetable oil for frying



Stir through the flour with the yeast, in a bowl. 
Add the sugar and lukewarm water. Stir through until the mixture turns to thick batter. Cover with cling film and leave for 30 minutes to rise.

Zest the zucchini with a grater and leave it in a strainer to dry. Sprinkle with salt.
After the mixture has risen, pour in the grated and add the zucchini, salt, pepper and the lemon zest.


Salt and pepper the fillets and dip them in the mixture.
Adjust the heat to a reasonably high setting and Fry them both sides until they attain a gold color.

Green salad
Ingredients (serves 4 people) Method
  • 1 bunch rocket
  • 4 Hearts of lettuce
  • 1 salad
  • 1 endive
  • 2 carrots grated
  • 3 tbsp Fresh onion chopped
  • 1 tbsp chopped dill
  • 2 tbsp coriander
Dressing
In a shaker:
1 tbsp spicy mustard
8 tbsp lemon juice
½ cup olive oil
Salt and pepper

Salad
Wash thoroughly the salad and tear it with your hands.
From endive remove its bottom and the outer leaves.
Place in a salad bowl our grasses, herbs, onion and carrot and pour in the sauce.
