Ingredients (serves 4 people) | Method |

Stir through the flour with the yeast, in a bowl. Add the sugar and lukewarm water. Stir through until the mixture turns to thick batter. Cover with cling film and leave for 30 minutes to rise. Zest the zucchini with a grater and leave it in a strainer to dry. Sprinkle with salt. After the mixture has risen, pour in the grated and add the zucchini, salt, pepper and the lemon zest. |
Salt and pepper the fillets and dip them in the mixture.
Adjust the heat to a reasonably high setting and Fry them both sides until they attain a gold color.

Dressing In a shaker: 1 tbsp spicy mustard 8 tbsp lemon juice ½ cup olive oil Salt and pepper Salad Wash thoroughly the salad and tear it with your hands. From endive remove its bottom and the outer leaves. Place in a salad bowl our grasses, herbs, onion and carrot and pour in the sauce. |
