Muffin with oats and tahini icing



Muffins
Ingredients (serves 6)  Method
  • 80g oats soaked in milk(180 g milk)
  • 1 egg
  • 70 g brown sugar
  • 50 g butter, melted
  • 1 vanilla
  • 110 g flour sifted
  • 4 g of dry yeast
  • 2 g salt
  • Cinnamon, ground allspice, ground coriander, nutmeg
Mix In a bowl, the egg with the sugar.
After a few minutes, add the melted butter and the vanilla and the soaked in milk and stir well.

In another bowl put the flour, the yeast and the spices, stir well and add the salt.

Do not stir for too long because the muffins will turn out tough.

Divide mixture in the ramekins and bake in preheated oven at 180 degrees for 10 minutes.


Tahini icing
Ingredients   Method
  • 200 gr water
  • 220gr sugar
  • 200 gr tahini
Combine sugar and water together in a small saucepan and boil to make the syrup. When the mixture is totally clear the syrup is ready. Add tahini. When the muffins are cold and ready, pour the tahini icing over them and let them dry.
